Sandwich with eggs salad, green herb, parsley, and spring onions

This is a fresh and filling sandwich which can be great for a tea party, on an appetizer tray or for lunch. Usually, when there is nothing left in my fridge, I at least have the fixings for this!

Ingredients
  1. Organic, Pastured Eggs, 2
  2. Mayonnaise, 2 tbsp (more or less depending on your preferred level of creaminess)
  3. Assorted Fresh Herbs, 1 tbsp (like basil, thyme, rosemary)
  4. Parsley, Italian, 1 tbsp
  5. Spring Onions, 2
  6. Gluten-Free Bread (or Romaine Lettuce as sandwich wrapper to make it Paleo)
Instructions
  1. Place eggs in a pot
  2. Cover with cool or room temperature water
  3. Heat pot til water boils
  4. Turn off heat, cover pot and let sit for 12 minutes
  5. While eggs are cooking, chop herbs, parsley and green onions
  6. Toast Bread
  7. Run cool water over eggs to stop cooking
  8. Peel eggs and chop them up
  9. Add to herb mixture
  10. Add Mayonnaise and stir mixture
  11. Place egg salad mixture on toast
  12. Enjoy!
