Salmon and Spinach Sandwich

One of my favorite post-workout treats is a salmon and spinach sandwich. I pack one before I leave for Boot Camp or Yoga Class so that I have an immediate go-to for the post-work out munchies. Here’s the way I make one:

This is a fresh and filling sandwich which can be great for a tea party, on an appetizer tray or for lunch. Usually, when there is nothing left in my fridge, I at least have the fixings for this!
